Fassis are justifiably proud of their reputation as the greatest cooks in Morocco. The city’s location on the edge of the fertile Saiss plateau means that the local markets are overflowing with the finest seasonal produce. In the 16th century, scholar and traveller Leo Africanus commented “I have never seen anywhere, neither in the whole of Africa, nor Asia, nor Italy, a market where one finds such a number of goods”.

Unfortunately for visitors to Fez not all restaurants do these ingredients justice. In fact it is said that the best food in Morocco is found in private homes and our housekeeper Khadija certainly upholds that tradition with her exquisite culinary repetoire which we urge you to explore.

Alternatively the sights and smells in the market may inspire you to conjur up your own Moroccan speciality. The kitchen at DAR 47 is well stocked with cookery books to give you a helping hand.

STREET FOOD:

Within less than one minute’s walk from DAR 47 you will  you find stalls selling bisara, sheep’s head, fresh doughnuts, and brochettes cooked over charcoal. Around Bab Boujloud there are a number of budget cafes serving traditional Moroccan food.
